Though these anchovies stay far from shore, come May or June they make their way to shallower waters for mating. Then, as winter approaches, they head back for the dark depths. The only way to catch them is by night, using Lampare boats that use bright lights to draw them to the surface. Fishing is done with purse seines, meaning only what's needed is taken from the sea, sparing unwanted species and accidental capture. Processed within hours of being caught, utilizing modern materials and methods, these once "lowly" fish have made their way into the kitchens of the finest chefs for their flavor, versatility, and full complement of healthy proteins, vitamins E & B, and Omega 3's.
